Flourless & Sugar-Free Energy Cookies

In a food processor, combine dates, dried cranberries, almonds, peanuts, pumpkin seeds, sesame seeds, and oatmeal. Pulse until everything is finely chopped and forms a sticky, crumbly texture.
Add the honey and olive oil to the mixture and pulse again until everything is well combined. The mixture should be moist and sticky enough to hold together when pressed.
Step 2: Form the cookies

Line a baking sheet with parchment paper or a silicone baking mat.
Scoop spoonfuls of the mixture and shape them into small cookie-sized rounds, pressing them gently to flatten slightly.
Place the cookies on the prepared baking sheet, leaving some space between each.
Step 3: Melt the chocolate

In a microwave-safe bowl or using a double boiler, melt the dark chocolate along with a small amount of olive oil (about 1 teaspoon) to smoothen the texture.
Stir until the chocolate is completely melted and smooth.
Step 4: Coat the cookies

Drizzle or dip the tops of the cookies into the melted dark chocolate, then return them to the baking sheet.
Allow the chocolate to set slightly before refrigerating or freezing the cookies to firm up.
Step 5: Chill and Serve

Place the baking sheet in the refrigerator for at least 1 hour, or until the cookies are firm and the chocolate is fully set.
Once chilled, serve and enjoy these healthy, energy-boosting treats!
