Flavorful Thai Chicken Lettuce Wraps: A Fresh and Zesty Bite

Heat the vegetable oil in a large skillet over medium heat.
Add the minced garlic and chopped onion to the skillet, sautéing for 1-2 minutes until fragrant and softened.
Add the ground chicken to the skillet, breaking it apart with a spoon. Cook until browned and fully cooked through, about 6-8 minutes.
Stir in the diced red bell pepper, grated carrot, fish sauce, soy sauce, lime juice, and brown sugar. Cook for another 3-4 minutes, allowing the flavors to meld together.
Adjust the seasoning to taste, adding chili flakes for extra spice if desired. Remove from heat and set aside.
Step 2: Make the Peanut Sauce

In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, grated ginger, and warm water.
Continue to whisk until the sauce is smooth and well combined. Adjust the consistency by adding more water if needed to make it pourable.
Step 3: Assemble the Lettuce Wraps

Take a lettuce leaf and spoon a generous amount of the chicken filling into the center.
Drizzle with the peanut sauce, and top with chopped peanuts, shredded carrots (optional), and fresh cilantro for extra flavor and crunch.
Squeeze lime juice over the wrap to add a fresh, zesty finish.
Step 4: Serve and Enjoy

Serve the wraps immediately while the chicken filling is warm, and the lettuce is crisp.
Pair with additional lime wedges and peanut sauce on the side for dipping.
