Flavor-packed Voodoo Bites: A Fiery, Savory Snack

In a large bowl, mix the buttermilk, hot sauce, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.
Add the chicken cubes to the bowl and toss to coat.
Cover and refrigerate for at least 1 hour, or up to overnight, to allow the flavors to meld.
Prepare the Coating:

In a separate shallow dish, combine the flour, cornmeal, paprika, thyme, chili powder, black pepper, garlic powder, and salt.
Stir well to mix all the ingredients evenly.
Fry the Voodoo Bites:

Heat vegetable oil in a large skillet or deep fryer over medium-high heat. The oil should be around 350°F (175°C).
While the oil is heating, remove the chicken from the marinade, letting any excess liquid drip off.
Dredge each chicken cube in the coating mixture, pressing lightly to ensure it sticks.
Fry the chicken in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes per batch or until golden brown and crispy on the outside, and the chicken reaches an internal temperature of 165°F (74°C).
Remove the chicken bites from the oil and place them on a paper towel-lined plate to drain any excess oil.
Make the Voodoo Sauce:

While the chicken is frying, combine all the Voodoo Sauce ingredients in a small saucepan over medium heat.
Stir constantly until the sauce is heated through and slightly thickened, about 2-3 minutes. Remove from heat.
Coat the Voodoo Bites:

Place the fried chicken bites in a large bowl.
Pour the Voodoo sauce over the chicken and toss to coat evenly. Make sure each bite is covered with the flavorful, spicy sauce.
Serve:

Serve immediately while hot, with extra dipping sauce on the side if desired. These Voodoo Bites go great with a side of ranch dressing or blue cheese dressing to cool down the heat.
