Preheat your oven to 350°F (175°C).
Slice the croissants in half horizontally and warm them in the oven for 5 minutes while you prepare the filling.
Cook the Eggs:
Heat a nonstick skillet over medium heat and melt the butter.
Crack the eggs into the skillet, season with salt and pepper, and cook to your preferred style (scrambled, over-easy, or sunny-side-up).
Assemble the Sandwiches:
Spread mayonnaise (if using) on the inside of each croissant half.
Place a slice of cheese on the bottom half of each croissant.
Add the cooked egg and your choice of bacon or sausage patty on top of the cheese.
Optionally, sprinkle fresh herbs for extra flavor.
Place the top half of the croissant over the fillings.
Melt the Cheese:
Return the assembled sandwiches to the oven for 2–3 minutes, just until the cheese melts.
Serve:
Serve warm and enjoy immediately!
