Filet Mignon with Mustard: A Tasty and Easy Recipe to Make

Pat the filet mignon steaks dry with paper towels to remove excess moisture. This will help achieve a perfect sear.
Season both sides of the steaks generously with salt and pepper.
Sear the Steaks:

Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot and shimmering, add the filet mignon steaks to the skillet.
Sear the steaks for 4-5 minutes on each side for medium-rare, or adjust the cooking time to your preferred level of doneness. (Use a meat thermometer for precision: 130°F for medium-rare, 140°F for medium.)
Once done, transfer the steaks to a plate and let them rest for 5 minutes.
Prepare the Mustard Sauce:

In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 30 seconds, until fragrant.
Add the Dijon mustard and fresh thyme to the pan, stirring to combine. Let it cook for 1-2 minutes to allow the flavors to meld.
Add the butter to the pan and stir until melted, creating a rich, creamy sauce. Taste and adjust the seasoning with salt and pepper as needed.
Serve the Filet Mignon:

Plate the rested filet mignon steaks and spoon the mustard sauce over the top. Garnish with additional fresh thyme or rosemary if desired.
Serve with your favorite sides such as roasted vegetables, mashed potatoes, or a simple green salad.
