Fiesta-Style Mexican Street Corn Coleslaw


In a small bowl, whisk together mayonnaise, sour cream, lime juice, lime zest, chili powder, smoked paprika, garlic powder, salt, and pepper until smooth and well blended.

Prepare the Slaw Base:
In a large mixing bowl, combine the green and red cabbage, corn kernels, diced red onion, and jalapeño (if using). Toss gently to mix.

Dress the Slaw:
Pour the prepared dressing over the slaw and toss until all ingredients are evenly coated.

Finish and Chill:
Fold in chopped cilantro and crumbled cotija cheese. Cover and refrigerate for at least 30 minutes to let the flavors develop.

Serve:
Before serving, garnish with extra cheese, cilantro, and a light sprinkle of chili powder for added flair.
