Feta & Cranberry Rigatoni Salad with Lemon Vinaigrette

Boil the rigatoni pasta in salted water according to the package directions.
Drain and rinse under cold water to cool.
Step 2: Make the Dressing
In a small bowl, whisk together lemon juice, olive oil, honey, salt, black pepper, and minced garlic until well combined.
Step 3: Assemble the Salad
In a large bowl, toss together the cooled pasta, crumbled feta, dried cranberries, chopped spinach, diced cucumber, toasted walnuts (if using), and sliced red onion.
Step 4: Dress & Serve
Drizzle the salad with the prepared lemon vinaigrette and toss gently to coat all the ingredients.
Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
