Remove the membrane from the back of the ribs for tender meat. Rinse and pat the ribs dry with paper towels.
Mix smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper (if using) in a small bowl. Rub the spice mix evenly over both sides of the ribs.
Load the Crockpot:
Cut the ribs into sections to fit into your crockpot, if needed. Place the ribs upright or stacked in the crockpot.
Pour the apple cider vinegar into the crockpot. This helps tenderize the ribs and adds flavor.
Slow Cook the Ribs:
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the ribs are tender and nearly falling off the bone.
Add the Barbecue Sauce:
Preheat your oven to 400°F (200°C) or set your broiler to high.
Carefully transfer the cooked ribs to a baking sheet lined with foil. Brush generously with barbecue sauce on both sides.
Caramelize the Sauce:
Place the ribs in the oven or under the broiler for 5-10 minutes, or until the barbecue sauce caramelizes and becomes sticky. Keep a close eye to prevent burning.
