Prepare the Topping: In a bowl, mix the mayonnaise, beaten egg, minced garlic, chopped onion, and sliced mushrooms. Add the diced tomatoes and shredded cheese to the mix, combining everything thoroughly.
Assemble the Dish: Place the partially cooked chicken breasts on top of the sliced potatoes in the baking dish. Pour the creamy mixture over the chicken, spreading it out evenly.
Bake: Place the baking dish in the oven and bake for 20-25 minutes, or until the chicken is fully cooked through (internal temperature should reach 165°F or 75°C) and the top is golden and bubbly.
Garnish and Serve: Once done, sprinkle freshly chopped parsley over the dish and serve hot!
