Elegant Pistachio Raspberry Crunch Cheesecake: A Flavorful Twist on a Classic Dessert

Preheat the oven to 350°F (175°C).
In a food processor, pulse the pistachios until finely ground. Add the shredded coconut, melted butter, and maple syrup (or honey). Pulse until the mixture is well combined and slightly sticky.
Press the mixture into the bottom of a 9-inch springform pan, creating an even layer. Bake for 10-12 minutes or until lightly golden. Remove from the oven and let it cool while preparing the cheesecake filling.
Make the Cheesecake Filling:

In a large bowl, beat the softened cream cheese until smooth and creamy. Add the sour cream and heavy cream, then continue to beat until well combined.
Add the granulated sugar, eggs, vanilla extract, and flour, mixing until fully incorporated. Be sure not to overmix to avoid incorporating too much air into the batter.
Pour the cheesecake filling over the cooled pistachio crust, smoothing the top with a spatula.
Bake the Cheesecake:

Lower the oven temperature to 325°F (160°C) and bake the cheesecake for 50-60 minutes, or until the center is set but still slightly jiggly.
Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour. Then, remove it from the oven and let it cool to room temperature.
Refrigerate the cheesecake for at least 4 hours, or preferably overnight, to allow it to fully set.
Prepare the Raspberry Topping:

In a small saucepan, combine the raspberries, sugar, lemon juice, and water. Heat over medium heat, stirring occasionally, until the raspberries break down and the mixture thickens (about 5-7 minutes).
Strain the raspberry mixture through a fine sieve to remove the seeds, then let the syrup cool.
Assemble the Cheesecake:

Once the cheesecake is fully chilled, carefully remove it from the springform pan.
Pour the raspberry syrup over the top of the cheesecake, allowing it to drizzle down the sides. Garnish with fresh raspberries and chopped pistachios for added elegance.
Serve:

Slice the cheesecake into wedges and serve cold. Enjoy the perfect balance of creamy, crunchy, tangy, and sweet in every bite.
