Once the oil is hot, pour the potato mixture into the pan, spreading it out evenly.
Cook on one side for 5-7 minutes, then flip to cook the other side until golden brown and crispy.
Add Cheese:
Sprinkle the grated cheese on top of the dish while it’s cooking on the second side, allowing it to melt as the dish finishes cooking.
Garnish and Serve:
Once the dish is crispy and cooked through, remove from heat and sprinkle with fresh chopped chives.
