Double Fried Chicken Sandwich with Signature Sauce: Crispy Perfection in Every Bite

In a bowl, mix buttermilk with hot sauce (if using). Add the chicken breasts and marinate in the fridge for at least 1 hour, or up to overnight. This will tenderize the chicken and give it extra flavor.
2. Prepare the Dredging Mixture:
In a shallow dish, combine all-purpose flour, cornstarch, garlic powder, paprika, cayenne pepper, black pepper, and salt. Mix thoroughly.
Remove the chicken from the buttermilk marinade and dredge each piece in the flour mixture, making sure it’s evenly coated.
3. Double Fry the Chicken:
Heat vegetable oil in a deep fryer or large pot over medium-high heat. The oil should be around 350°F (175°C).
Fry the chicken in batches for about 3-4 minutes per side, or until golden brown and crispy.
Once fried, remove the chicken from the oil and let it drain on a paper towel-lined plate.
For an extra crispy finish, fry the chicken again for an additional 2-3 minutes on each side. Remove and drain once more.
4. Make the Signature Sauce:
In a small bowl, mix together mayonnaise, honey, Dijon mustard, hot sauce (if using), and smoked paprika until smooth and well combined.
5. Assemble the Sandwich:
Toast brioche buns until golden brown.
Spread a generous amount of the signature sauce on the bottom half of each bun.
Add a layer of lettuce, followed by a fried chicken piece.
Top with pickles and sliced tomatoes (if desired), then close with the top bun.
6. Serve:
Serve your Double Fried Chicken Sandwich immediately with your favorite side dishes, like fries or coleslaw.
