Preheat oven to 350°F (175°C). Grease and line a loaf or round cake pan.
Grind the pistachios in a food processor until fine but not a paste.
In a bowl, mix flour, baking powder, salt, and ground pistachios.
In another bowl, beat butter and sugar until light and fluffy.
Add eggs, one at a time, mixing well after each.
Stir in vanilla.
Alternate adding the flour mixture and milk to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined.
Pour batter into the prepared pan and bake for 40–50 minutes, or until a toothpick comes out clean.
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.
