Wash and peel the potatoes. Grate them finely using a box grater or a food processor.
Cook the Carrot and Red Peppers:
Peel and grate the carrot. Dice the red peppers into small pieces.
In a frying pan, heat a little olive oil and sauté the carrot and red peppers for 3-4 minutes until softened.
Mix the Ingredients:
In a large mixing bowl, combine the grated potatoes, sautéed carrots, red peppers, and chopped green onions.
Add salt, black pepper, and mix well.
Prepare the Batter:
In a separate bowl, beat the 3 eggs and add the cup of water, baking powder, and flour. Stir until smooth.
Pour the egg-flour mixture into the potato-veggie mixture. Stir until well combined, making sure everything is coated.
Add the Cheese:
Fold in the grated cheese and fresh chopped parsley into the mixture for extra flavor.
Bake:
Preheat the oven to 375°F (190°C). Grease a baking dish with olive oil or line it with parchment paper.
Pour the potato mixture into the baking dish, spreading it out evenly.
Bake in the oven for about 30-40 minutes, or until the top is golden brown and crispy.
Serve:
Once baked, remove from the oven and let it cool slightly. Slice and serve warm!
