Deep-Dish Pizza Pie: A Hearty and Flavorful Classic

In a small bowl, dissolve the sugar in warm water and add the yeast. Let it sit for 5-10 minutes until it becomes frothy.
In a large mixing bowl, combine the flour and salt. Add the yeast mixture and olive oil, and stir until the dough begins to form.
Knead the dough on a floured surface for 5-7 minutes, or until smooth and elastic. Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
Make the Sauce:

In a saucepan, combine the crushed tomatoes, tomato paste, oregano, basil, red pepper flakes (if using), salt, and pepper. Simmer on low for about 20 minutes, stirring occasionally, until the sauce thickens. Set aside to cool.
Cook the Filling:

In a skillet, cook the crumbled sausage over medium heat until browned. Add the onion and garlic, cooking until softened (about 3-4 minutes). If desired, add any extra vegetables (like bell peppers or mushrooms) and cook for another 3-4 minutes until softened. Set aside.
Assemble the Pizza:

Preheat the oven to 425°F (220°C).
Grease a 9-inch deep-dish pie pan or a cast-iron skillet and sprinkle it with cornmeal (optional).
Roll out the dough on a floured surface to fit the pan, making sure the edges come up the sides of the pan.
Layer the cheese in the following order: mozzarella, ricotta, and Parmesan.
Spread the cooked sausage mixture over the cheese layer.
Pour the prepared tomato sauce over the sausage mixture, spreading evenly.
Bake the Pizza:

Bake in the preheated oven for 25-30 minutes, or until the crust is golden and the sauce is bubbling.
Let the pizza sit for 5 minutes before slicing to allow the layers to set.
Serve:

Slice and serve hot, enjoying the gooey cheese, savory sausage, and rich tomato sauce all encased in the perfect crust.
