Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
In a mixing bowl, combine the chocolate cake mix, milk, vegetable oil, eggs, and vanilla extract. Stir until smooth.
Gently fold in ½ cup of cherry pie filling.
Pour the batter into the prepared baking dish and bake for 30-35 minutes, or until a toothpick inserted comes out clean. Let the cake cool completely.
2. Prepare the Ganache:
In a small saucepan, heat ½ cup heavy cream over medium heat until steaming (do not boil).
Pour the hot cream over the chocolate chips in a bowl. Let sit for 2 minutes and then stir until smooth and glossy.
3. Make the Whipped Topping:
In a cold bowl, beat heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
4. Assemble & Serve:
Spread the remaining cherry pie filling evenly over the cooled cake.
Pour the chocolate ganache over the top, spreading it out to cover the entire cake. Let it set for 10 minutes.
Top with the whipped cream, fresh cherries (or maraschino cherries), and chocolate shavings for garnish.
Slice and enjoy!
