Decadent Buckeye Brownie Cookies: The Perfect Chocolate-Peanut Butter Combo

Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
In a large mixing bowl, combine brownie mix, flour, oil, and eggs until a thick dough forms. Chill the dough in the refrigerator for 15-20 minutes to make it easier to handle.
Step 2: Make the Peanut Butter Filling

While the dough chills, mix peanut butter and powdered sugar in a separate bowl until smooth.
Roll the mixture into small balls (about 1 teaspoon each) and set aside.
Step 3: Assemble the Cookies

Scoop out tablespoons of brownie dough and roll into balls. Flatten each dough ball slightly and place a peanut butter ball in the center.
Fold the brownie dough around the peanut butter ball, ensuring it’s completely enclosed. Roll gently to form a smooth ball.
Arrange on the prepared baking sheets, spacing the cookies about 2 inches apart.
Step 4: Bake the Cookies

Bake for 10-12 minutes, or until the edges are set but the centers are still soft. Let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Step 5: Add the Chocolate Topping

Melt the chocolate chips and coconut oil in a microwave-safe bowl in 20-second intervals, stirring after each interval, until smooth.
Drizzle or spoon the melted chocolate over the cooled cookies. Allow the chocolate to set before serving.
