Crunchy Broccoli Apple Salad: A Fresh, Tangy, and Nourishing Delight

Cut the broccoli florets into bite-sized pieces. If you prefer a softer texture, you can blanch the broccoli by briefly placing it in boiling water for 2 minutes and then plunging it into an ice bath. This will help maintain its bright green color and tenderness. If you prefer a crunchier texture, skip this step and use the broccoli raw.
2. Chop the Apple and Onion:

Core and chop the apple into bite-sized cubes, and slice the red onion thinly.
3. Make the Dressing:

In a small bowl, whisk together the Greek yogurt (or mayonnaise), apple cider vinegar, honey or maple syrup, Dijon mustard (if using), and a pinch of salt and pepper. Adjust the seasoning to taste.
4. Combine the Salad:

In a large bowl, combine the chopped broccoli, apple pieces, red onion, and any optional ingredients like sunflower seeds, walnuts, raisins, or dried cranberries.
5. Dress the Salad:

Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
6. Serve and Enjoy:

Serve immediately or refrigerate for 30 minutes to allow the flavors to marinate. Enjoy this crunchy, tangy salad as a refreshing side or light meal!
