Crunchy Almond Joy Bars

Spread the chopped almonds and shredded coconut on a baking sheet. Toast them in the oven for 8-10 minutes, or until golden brown. Be sure to stir them halfway through to ensure even toasting. Set aside to cool.
Step 2: Mix the Ingredients

In a large bowl, combine the toasted almonds and coconut with the honey, peanut butter, vanilla extract, and sea salt. Stir everything together until well-combined. The mixture should be sticky but firm enough to hold together when pressed.
Step 3: Press into a Pan

Line a square baking pan (8×8 or 9×9 inches) with parchment paper for easy removal. Press the almond-coconut mixture evenly into the pan.

In a microwave-safe bowl, melt the chocolate chips and coconut oil together in 30-second intervals, stirring in between, until smooth and fully melted.
Step 5: Top the Bars

Pour the melted chocolate over the almond-coconut mixture in the pan, spreading it into an even layer. Place the pan in the refrigerator for at least 1 hour to allow the chocolate to set.
Step 6: Slice and Serve

Once the chocolate has set, slice the bars into squares. Enjoy the crunchy, sweet treat!
