Remove the membrane from the back of the ribs. Pat the ribs dry with paper towels and cut them into smaller sections to fit in your Crockpot.
Make the Glaze:
In a small bowl, combine the minced garlic, onion powder, dried thyme, balsamic vinegar, Dijon mustard, honey, lemon juice, black pepper, salt, and water. Whisk until everything is well combined.
Set Up the Crockpot:
Place the ribs in the Crockpot and pour the glaze over the top, making sure they are well-coated.
Cook the Ribs:
Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the ribs are tender and the meat easily pulls away from the bone.
Finish with a Glaze:
If you want a slightly caramelized glaze, after cooking, preheat your oven’s broiler. Transfer the ribs to a baking sheet and brush with extra glaze from the Crockpot. Place them under the broiler for 3-5 minutes, just until the glaze starts to bubble and caramelize.
Serve:
Slice the ribs between the bones, drizzle with extra glaze, and serve with your favorite sides.
