Crockpot French Onion Meatloaf with Melted Swiss Cheese: A Comfort Food Classic

Heat the olive oil in a skillet over medium heat. Add the sliced onions and cook, stirring occasionally, for about 10 minutes until the onions are softened and caramelized. Set aside.
Make the Meatloaf Mixture:

In a large bowl, combine the ground beef, breadcrumbs, milk, egg, French onion soup mix, Worcestershire sauce, garlic powder, salt, and pepper.
Add in the caramelized onions (reserve a small amount for topping if desired) and mix everything together until well combined.
Shape and Cook the Meatloaf:

Transfer the meatloaf mixture into a loaf pan that will fit inside your crockpot, or form it into a loaf shape that will fit comfortably in the slow cooker.
Place the loaf into the crockpot and cover with the lid. Cook on low for 4-6 hours or on high for 2-3 hours, until the meatloaf is fully cooked and reaches an internal temperature of 160°F (71°C).
Add the Swiss Cheese:

About 10 minutes before serving, sprinkle the shredded Swiss cheese on top of the meatloaf. Cover and continue cooking until the cheese is melted and bubbly.
Serve:

Once the cheese is melted, carefully remove the meatloaf from the crockpot and slice. Serve with the reserved caramelized onions on top for extra flavor.
