Crock Pot Cashew Chicken Recipe

In a bowl, toss the chicken tenders with the flour and black pepper until evenly coated.
Step 2: Sauté the Chicken (Optional)
Heat canola oil in a skillet over medium heat. Once hot, add the coated chicken and sear for about 2-3 minutes on each side until golden brown. This step is optional but adds a nice color and flavor to the chicken. If you’re short on time, you can skip this step and add the chicken directly to the slow cooker.
Step 3: Combine Ingredients in the Slow Cooker
Place the seared or raw chicken tenders into the slow cooker.
In a small bowl, whisk together the soy sauce, rice wine vinegar, ketchup, brown sugar, minced garlic, grated ginger, and red pepper flakes until well combined.
Pour the sauce over the chicken in the slow cooker, ensuring the chicken is evenly coated.
Step 4: Slow Cook the Chicken
Cover and cook on low for 4-6 hours or high for 2-3 hours, until the chicken is cooked through and tender.
Step 5: Add the Cashews
About 20 minutes before serving, stir in the cashews and allow them to heat through.
Step 6: Serve
Once the chicken is fully cooked and the cashews are heated, serve the Crock Pot Cashew Chicken over steamed rice or with sautéed vegetables for a complete meal.
