Crock Pot Cashew Chicken: A Deliciously Easy and Flavorful Meal

Place the chicken pieces in the bottom of your Crock Pot (slow cooker).
Make the Sauce:

In a small bowl, whisk together the soy sauce, honey, hoisin sauce, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes (if using).
Pour the sauce over the chicken in the Crock Pot, making sure the chicken is well-coated.
Cook the Chicken:

Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is tender and fully cooked.
Thicken the Sauce:

In the last 30 minutes of cooking, stir in the cornstarch slurry (cornstarch mixed with water) to thicken the sauce.
Add the cashews to the slow cooker and stir them into the sauce. Let the chicken cook for the remaining time to allow the sauce to thicken and the cashews to soften slightly.
Garnish and Serve:

Once the chicken is cooked and the sauce has thickened, garnish with sesame seeds and sliced green onions, if desired.
Serve the Crock Pot Cashew Chicken over steamed rice, with veggies, or on its own for a quick and delicious meal.
