In a skillet, heat the olive oil over medium-high heat. Add the beef stew cubes and sear the meat on all sides until browned. Transfer the beef to your crock pot.
2. Sauté the Vegetables:
In the same skillet, add the onion and cook for 2-3 minutes until softened. Add the garlic and sauté for another 30 seconds. Transfer the onions and garlic to the crock pot with the beef.
3. Add the Liquids and Seasonings:
Pour in the beer and beef broth into the crock pot. Stir in the Worcestershire sauce, tomato paste, paprika, thyme, salt, pepper, and sugar. Mix well to combine.
4. Slow Cook the Stew:
Cover the crock pot and cook on low for 6-8 hours, or until the beef is tender.
5. Add the Potatoes and Vegetables:
About 30 minutes before serving, add the diced potatoes (and any additional vegetables, like carrots). Stir them in and continue cooking until the vegetables are tender.
6. Serve:
Once the beef is tender and the stew has thickened, taste and adjust the seasoning if necessary. Serve hot, garnished with fresh herbs if desired.
