Originating from the Southern United States, hoecakes are often served as a side dish, perfect for pairing with stews, fried chicken, or barbecue. Easy to make and deeply flavorful, these golden, crispy treats are an essential part of Southern comfort food that is sure to please everyone at the table.
Ingredients
1 cup cornmeal (yellow or white)
1/2 cup all-purpose flour
1 tablespoon sugar (optional, for a slight sweetness)
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup buttermilk (or regular milk if preferred)
1/4 cup water
1 large egg
2 tablespoons unsalted butter, melted
Vegetable oil for frying
How to Make
Step 1: Prepare the Batter
In a large mixing bowl, whisk together the cornmeal, flour, sugar (if using), baking powder, and salt.
In a separate bowl, beat the egg and then add the buttermilk, water, and melted butter. Stir to combine.
Gradually add the wet ingredients to the dry ingredients, mixing until just combined. The batter should be thick but pourable. If it’s too thick, add a little more water or buttermilk until you reach the desired consistency.
Step 2: Heat the Oil
Heat about 1/4 inch of vegetable oil in a large skillet or cast-iron pan over medium heat.
To check if the oil is ready, drop a small spoonful of batter into the pan. If it sizzles and begins to brown, the oil is hot enough.
Step 3: Fry the Hoecakes
Scoop a spoonful of batter and carefully drop it into the hot oil. Flatten it slightly with the back of the spoon to form a small, round cake.
Fry the hoecakes for 2-3 minutes on each side, or until golden brown and crispy. Use tongs or a slotted spoon to flip them gently.
Remove the hoecakes from the skillet and drain on paper towels to remove excess oil.
Step 4: Serve
Serve the hoecakes warm, either as a side dish or a snack. They are delicious on their own or with a dollop of butter, honey, or syrup.
