Crispy Potato Tart with Balsamic & Thyme: A Flavorful Twist on Classic Tarts

Preheat your oven to 400°F (200°C).
Roll out the puff pastry on a floured surface and fit it into a tart pan or onto a baking sheet, pressing gently along the edges. Poke a few holes in the pastry with a fork to prevent it from puffing up while baking.
In a large bowl, toss the thinly sliced potatoes with olive oil, thyme, garlic powder, salt, and pepper until evenly coated.
Arrange the potato slices in an overlapping circular pattern on top of the pastry, starting from the outer edge and working inward.
Place the tart in the preheated oven and bake for 25-30 minutes, or until the potatoes are tender and the pastry is golden and crispy.
While the tart bakes, make the balsamic glaze by combining the balsamic vinegar and honey (if using) in a small saucepan over medium heat. Let it simmer for 5-7 minutes, stirring occasionally, until it thickens slightly.
Once the tart is baked, remove it from the oven and drizzle the balsamic glaze over the top. Garnish with fresh thyme sprigs if desired.
Slice and serve while warm.
