Crispy Eggplant “Fries” – A Healthier Alternative to Fried Potatoes

Slice the eggplants into thin rounds or strips, depending on your preference.

Sprinkle with salt and let the eggplant sit in a colander for 10-15 minutes to draw out excess moisture. Pat the slices dry with a paper towel.

Prepare the Egg Wash:

Crack the 3 eggs into a bowl and whisk until smooth and combined.

Cook the Eggplant:

Heat a pan with a little oil over medium heat.

Dip each eggplant slice into the egg wash, making sure it’s evenly coated.

Fry each slice for 2-3 minutes per side until golden and crispy.

Serve:

Remove the eggplant slices from the pan and drain excess oil on a paper towel.
