Start by patting the chicken thighs dry with paper towels. This is key to achieving that crispy skin. The drier the skin, the crispier it will get when cooking.
Season
Rub the chicken thighs with olive oil, ensuring the skin is well coated. Sprinkle on the garlic powder, onion powder, paprika, salt, and pepper. If you like, you can add a sprinkle of fresh herbs for an extra layer of flavor.
Preheat the Pan (or Air Fryer)
If using a skillet, preheat a heavy-bottomed skillet (preferably cast iron) over medium-high heat. If using an air fryer, preheat it to 400°F (200°C). Both methods work great for crispy chicken thighs!
Cook the Chicken
Skillet Method: Once the skillet is hot, add the chicken thighs, skin-side down. Cook for about 7-8 minutes, without moving them, until the skin is golden brown and crispy. Flip the chicken and cook for an additional 8-10 minutes on the other side, or until the internal temperature reaches 165°F (75°C).
Air Fryer Method: Place the chicken thighs in the air fryer basket, skin-side up. Cook for 25-30 minutes at 400°F (200°C), flipping halfway through, until the skin is crispy and the internal temperature reaches 165°F (75°C).
Rest the Chicken
After cooking, let the chicken rest for 5 minutes to allow the juices to redistribute. This helps keep the meat tender while maintaining that crispy skin.
Serve
Serve your crispy chicken thighs with your favorite sides like mashed potatoes, roasted vegetables, or a fresh salad. Enjoy the perfect balance of crispy skin and juicy, flavorful meat!
