Crispy Buffalo Chicken Thighs

Preheat your oven to 425°F (220°C).
Step 2: Prepare the Spice Rub
In a small bowl, mix together the salt, chili powder, smoked paprika, baking powder, garlic powder, onion powder, black pepper, and cayenne pepper.
Step 3: Season the Chicken
Pat the chicken thighs dry with paper towels—this helps achieve crispy skin.
Rub the spice mixture all over the chicken thighs, ensuring even coating.
Step 4: Bake the Chicken
Place the seasoned chicken thighs on a parchment-lined baking sheet or in a baking dish.
Bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy.
Step 5: Add Buffalo Sauce
Remove the chicken from the oven and brush a generous amount of buffalo sauce over each thigh.
Return to the oven and bake for another 5-10 minutes to let the sauce set.
Step 6: Serve and Enjoy
Let the chicken rest for a few minutes before serving.
Serve hot with celery sticks, carrot sticks, and a side of ranch or blue cheese dressing for dipping.
