Crispy Bang Bang Potatoes: A Flavorful Crunch with a Sweet and Spicy Kick

Preheat your oven to 400°F (200°C).
In a large bowl, toss the halved or quartered potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper until well coated.
Roast the Potatoes:

Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until they are golden and crispy on the outside and tender on the inside. Make sure to flip the potatoes halfway through cooking for even crispness.
Make the Bang Bang Sauce:

While the potatoes are roasting, prepare the Bang Bang sauce by whisking together the mayonnaise, sweet chili sauce, sriracha, and honey (if using) in a small bowl. Adjust the sriracha to taste depending on how spicy you want the sauce.
Toss the Potatoes in the Sauce:

Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Drizzle the Bang Bang sauce over the warm potatoes and gently toss them to coat evenly.
Serve:

Garnish with freshly chopped parsley and serve immediately as a snack, side dish, or appetizer. For added flavor, you can sprinkle a little extra paprika or even a squeeze of lime juice.
