Add the shrimp and cook until they turn pink and opaque, about 3-4 minutes.
Remove shrimp from the pot and set aside.
Step 2: Sauté the Vegetables
In the same pot, add the chopped onion, garlic, and diced jalapeños. Cook for 3-4 minutes until the onion becomes soft and translucent.
Stir in the smoked paprika, cayenne pepper (if using), cumin, salt, and pepper. Cook for another minute until the spices are fragrant.
Step 3: Add the Broth and Simmer
Pour in the chicken or seafood broth and bring it to a simmer. Let it cook for about 5-7 minutes to allow the flavors to meld together.
Step 4: Add the Cream and Corn
Lower the heat and stir in the heavy cream, corn kernels (if using), and diced tomatoes. Let the soup simmer for another 5 minutes until it thickens slightly.
Step 5: Return the Shrimp and Finish
