Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente.
Drain the pasta and set aside, reserving about 1/2 cup of pasta water for later.
Step 2: Sauté the Vegetables
While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 2-3 minutes, until softened.
Add the minced garlic to the pan and cook for another 1 minute, stirring constantly to avoid burning.
Step 3: Make the Creamy Sauce
Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they begin to soften and release their juices.
Pour in the heavy cream and vegetable broth, then stir in the Italian seasoning. Let the sauce simmer for 5 minutes, allowing the flavors to meld and the sauce to thicken slightly.
Season with salt and pepper to taste.
Step 4: Combine Pasta and Sauce
Add the cooked pasta to the skillet and toss it in the creamy sauce. If the sauce is too thick, add a little reserved pasta water to loosen it up to your desired consistency.
Stir in the cubed mozzarella cheese and allow it to melt slightly into the sauce for a creamy texture.
Step 5: Serve and Garnish
Transfer the creamy pasta to serving bowls. Top with freshly chopped basil and a sprinkle of grated Parmesan, if desired.
Serve immediately and enjoy the creamy, cheesy goodness!
