Creamy Mushroom & Ground Beef Bake

Set your oven to 350°F (175°C) and lightly grease a baking dish.

Cook the ground beef:

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat, if necessary, and set the beef aside.

Sauté the vegetables:

In the same skillet, add the remaining tablespoon of olive oil. Sauté the chopped onions and garlic until softened, about 2-3 minutes.

Add the sliced mushrooms and cook for another 5-6 minutes, until the mushrooms release their moisture and become tender.

Prepare the sauce:

Stir in the cream of mushroom soup, sour cream, dried thyme, salt, and pepper. Mix until well combined.

Combine beef and sauce:

Add the cooked ground beef back into the skillet with the mushroom mixture. Stir in the cooked pasta (if using) and half of the shredded cheddar cheese. Mix everything together until evenly combined.

Bake:

Transfer the beef and mushroom mixture into the prepared baking dish. Top with the remaining cheddar cheese and grated Parmesan cheese.

Bake for 20-25 minutes, or until the cheese is melted and bubbly.

Garnish and serve:

Optionally, garnish with fresh parsley before serving. Enjoy your creamy mushroom and ground beef bake!
