Using a sharp knife, carefully slice the pork tenderloin lengthwise without cutting all the way through, creating a “pocket” for the filling.
Spread half of the Boursin cheese inside the tenderloin and close it tightly. Secure with kitchen string or toothpicks to hold its shape.
Step 2: Brown the Pork
Heat 2 tablespoons of olive oil in a large oven-safe skillet or casserole dish over medium heat.
Sear the stuffed pork tenderloin on all sides until golden brown, about 2-3 minutes per side.
Remove from the pan and set aside.

Transfer to a preheated oven at 180°C (350°F) and bake for 20-25 minutes, until the cheese is golden and bubbly, and the pork is cooked through (internal temperature 145°F/63°C).
Step 5: Serve and Enjoy!
Remove the pork from the oven and let it rest for 5 minutes before slicing.
Serve with roasted potatoes, mashed potatoes, or a fresh salad for a balanced meal.
