Creamy Boursin-Stuffed Pork Tenderloin with Crispy Cheese Crust

Using a sharp knife, carefully slice the pork tenderloin lengthwise without cutting all the way through, creating a “pocket” for the filling.

Spread half of the Boursin cheese inside the tenderloin and close it tightly. Secure with kitchen string or toothpicks to hold its shape.

Step 2: Brown the Pork
Heat 2 tablespoons of olive oil in a large oven-safe skillet or casserole dish over medium heat.

Sear the stuffed pork tenderloin on all sides until golden brown, about 2-3 minutes per side.

Remove from the pan and set aside.

Step 3: Prepare the Creamy Sauce
In the same pan, sauté onions and garlic until soft and fragrant.

Add the bacon or diced ham and cook until slightly crispy.

Pour in the white wine (if using) and let it reduce for 2 minutes.

Stir in crème fraîche and the remaining Boursin cheese, mixing until smooth.

Season with salt and pepper to taste.

Step 4: Bake the Pork
Place the browned pork tenderloin back into the pan, coating it well with the sauce.

Sprinkle the top with grated cheese and add fresh thyme sprigs for extra flavor.

Transfer to a preheated oven at 180°C (350°F) and bake for 20-25 minutes, until the cheese is golden and bubbly, and the pork is cooked through (internal temperature 145°F/63°C).

Step 5: Serve and Enjoy!
Remove the pork from the oven and let it rest for 5 minutes before slicing.

Serve with roasted potatoes, mashed potatoes, or a fresh salad for a balanced meal.
