Creamy Beef & Shells Casserole: Comfort in Every Bite

Bring a large pot of salted water to a boil. Add the pasta shells and cook according to the package directions until al dente. Drain and set aside.
Step 2: Prepare the Beef Mixture
While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes, until softened.
Add the minced garlic and cook for another 30 seconds, until fragrant.
Add the ground beef to the skillet and cook, breaking it apart with a spoon, until browned and fully cooked, about 5-7 minutes. Drain any excess grease.
Stir in the diced tomatoes, beef broth, sour cream, Italian seasoning, salt, and pepper. Bring the mixture to a simmer and cook for 3-4 minutes, allowing the flavors to meld together.
Step 3: Combine and Bake
Preheat the oven to 375°F (190°C).
In a large mixing bowl, combine the cooked pasta shells with the beef mixture, making sure the shells are well coated.
Transfer the mixture to a greased 9×13-inch baking dish.
Sprinkle the shredded cheddar cheese and grated Parmesan cheese evenly over the top of the casserole.
Bake for 20-25 minutes, or until the cheese is melted and bubbly.
Step 4: Serve and Enjoy
Garnish with freshly chopped parsley, if desired. Serve the casserole hot and enjoy!
