Creamy Avocado Cabbage Salad with Sesame Dressing: A Fresh, Nutty Delight

Wash and shred the cabbage into fine strips. If you prefer, you can use a food processor for quick shredding.
Dice the ripe avocado into cubes, ensuring that it’s slightly firm but ripe enough to hold its shape in the salad.
Step 2: Toast the Sesame Seeds
If you haven’t already toasted the sesame seeds, place them in a small dry skillet over medium heat. Toast for 2-3 minutes, stirring frequently, until golden brown and fragrant. Remove from heat and set aside.
Step 3: Make the Sesame Dressing
In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, honey (or maple syrup), Dijon mustard, minced garlic, lime juice, and a pinch of salt and pepper. Whisk until the dressing is smooth and well combined.
Step 4: Assemble the Salad
In a large mixing bowl, toss the shredded cabbage with the diced avocado.
Pour the sesame dressing over the cabbage and avocado, tossing gently to coat everything evenly.
Step 5: Garnish and Serve
Sprinkle the toasted sesame seeds and chopped cilantro (if using) over the top of the salad for added crunch and flavor.
Serve immediately, or refrigerate for up to an hour before serving for the flavors to meld.
