Cream Cheese and Bacon Stuffed Doritos Chicken

Prepare the chicken: Preheat the oven to 375°F (190°C). Cut a pocket into each chicken breast by slicing horizontally but not all the way through, leaving the edges intact.

Make the filling: In a mixing bowl, combine the softened cream cheese, crumbled bacon, and shredded cheddar cheese. Season with salt and pepper to taste. Stir until well combined.

Stuff the chicken: Spoon the cream cheese and bacon mixture into the pocket of each chicken breast. Secure the opening with toothpicks if needed to hold the filling inside.

Prepare the coating: Place the flour, beaten eggs, and crushed Doritos crumbs in three separate shallow bowls. First, dredge each stuffed chicken breast in the flour, then dip in the egg mixture, and finally coat thoroughly with the crushed Doritos crumbs.

Cook the chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the coated chicken breasts and cook for 3-4 minutes per side until golden and crispy.

Bake the chicken: Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Serve: Remove toothpicks and serve hot with your favorite sides.
