Season the chicken fillets with salt, black pepper, and paprika on both sides.
2️⃣ Cook the Chicken:
Heat 2 tablespoons of olive oil in a large pan over medium heat.
Add the chicken fillets and cook for about 5-6 minutes on each side, or until golden brown and fully cooked.
Remove the chicken from the pan and set aside.
3️⃣ Sauté the Vegetables:
In the same pan, add a bit of vegetable oil if needed.
Add the chopped onions, blue onion, and carrot to the pan and sauté until the onions are softened, about 5-7 minutes.
4️⃣ Add Tomato Paste & Water:
Stir in 2 tablespoons of tomato paste and cook for another minute.
Add 150 ml of hot water and bring to a simmer.
5️⃣ Cook the Rice:
Stir in the rice, tomato, bell pepper, and corn.
Cover the pan and let it simmer on low heat for 15-20 minutes, or until the rice is cooked and the liquid has absorbed.
6️⃣ Serve:
Once the rice is cooked, place the chicken fillets on top of the rice and garnish with fresh dill.
