Stuff the chicken: Fill each chicken breast with slices of brie cheese and the spinach-cranberry mixture. Drizzle with honey, if using, and secure the opening with toothpicks.
Sear the chicken: Heat the same pan over medium-high heat. Sear the chicken breasts for 2 minutes on each side, until golden brown.
Bake the chicken: Transfer the pan to the oven and bake for 15 to 18 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F or 74°C).
Rest and serve: Let the chicken rest for 5 minutes before slicing. Serve warm and enjoy!
