Cranberry Pistachio Energy Bites: A Delicious, Energy-Boosting Snack!

Start by chopping the pistachios and dried cranberries into smaller pieces to make them easier to mix and eat.
In a large mixing bowl, combine the rolled oats, chopped pistachios, chopped cranberries, and ground flaxseed.
Make the Binding Mixture:

In a separate small bowl, whisk together the almond butter (or peanut butter), honey (or maple syrup), and vanilla extract. If you prefer a smoother texture, you can lightly warm the almond butter and honey in the microwave for 10-15 seconds to help them mix better.
Combine the Mixtures:

Pour the wet mixture over the dry ingredients and stir everything together until fully combined. You should have a sticky, dough-like texture. If the mixture feels too dry, add a little more almond butter or honey. If it’s too wet, add extra oats.
Form the Energy Bites:

Once the mixture is well combined, use your hands or a spoon to scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat with the rest of the mixture, making about 12-15 energy bites.
Chill:

Place the formed energy bites on a baking sheet or plate lined with parchment paper and refrigerate them for at least 30 minutes. This helps them firm up and hold their shape.
Serve and Enjoy:

After chilling, your Cranberry Pistachio Energy Bites are ready to enjoy! Store them in an airtight container in the refrigerator for up to 1 week, or freeze them for longer storage.
