Country Ranch Green Beans and Potatoes with Bacon: A Hearty Southern Side Dish

In a large skillet, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Once done, remove the bacon from the skillet and set aside on a paper towel to drain excess grease. Leave about 1 tablespoon of bacon drippings in the skillet for flavor.
Cook the Potatoes:

In the same skillet with the bacon drippings, add the potato pieces and cook over medium heat. Stir occasionally to brown all sides and cook for about 8-10 minutes until the potatoes are tender but not fully cooked through.
Add the Green Beans:

Add the trimmed green beans to the skillet with the potatoes. Pour in the chicken broth, garlic powder, and ranch seasoning mix. Stir everything together to coat the vegetables with the seasoning.
Simmer:

Cover the skillet and let everything simmer for about 10-12 minutes, or until the green beans are tender and the potatoes are fully cooked. If the mixture begins to dry out, add a bit more broth or water as needed.
Finish and Serve:

Once the vegetables are cooked to your liking, stir in the crispy bacon and adjust seasoning with salt and pepper to taste. Garnish with fresh parsley, if desired, and serve hot.
