Cottage Cheese-Stuffed Pancakes with Sour Cream Glaze

Prepare the Pancake Batter: In a bowl, whisk together the milk and eggs. Gradually add the flour, stirring until smooth and well combined. Set the batter aside to rest for about 10 minutes.

Make the Cottage Cheese Filling: In a separate bowl, mix the cottage cheese, sugar, and vanilla extract (if using). Stir until smooth. You can adjust the sweetness to your taste by adding more sugar if you like.

Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil. Pour a small amount of pancake batter into the pan to form a round pancake. Once the pancake starts to bubble on the surface, spoon a generous dollop of the cottage cheese mixture onto the center. Carefully spoon a bit more batter over the filling to cover it. Cook until the pancake is golden brown on both sides, about 2-3 minutes per side.

Prepare the Sour Cream Glaze: In a small bowl, combine the sour cream, honey (or sugar), and lemon juice (if using). Stir until smooth. Adjust the sweetness and tanginess to your preference.

Assemble the Pancakes: Stack the cottage cheese-filled pancakes on a serving plate. Drizzle the sour cream glaze over the top and serve warm.
