In a food processor or blender, blend the cottage cheese until completely smooth.

2. Mix Ingredients:
In a mixing bowl, stir together the blended cottage cheese, matcha powder, honey, and vanilla extract (if using) until smooth and evenly colored.

3. Add Coconut Flour and White Chocolate:
Fold in the coconut flour and white chocolate chips, mixing until a thick dough forms.

4. Adjust Consistency:
If the dough is too sticky, add an extra teaspoon of coconut flour. If it’s too dry, add 1 teaspoon of milk or water.

5. Form the Bites:
Scoop 1-tablespoon portions of the dough and roll them into small balls. Optionally, coat each bite in shredded coconut for extra texture.

6. Refrigerate or Freeze:
Place the bites on a parchment-lined tray and refrigerate for 1-2 hours, or freeze for 30 minutes to firm up.

7. Store:
Store the bites in an airtight container in the fridge for up to 5 days, or freeze for up to 1 month.
