In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy. Add eggs and vanilla and beat well.
In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients until fully incorporated. Stir in the chocolate chips.
Drop rounded spoonfuls (or use a cookie scoop) onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are golden and the centers are just set. Cool completely on a wire rack.
2. Soften the Ice Cream:
Let your ice cream sit out for 5-10 minutes to soften slightly—this makes it easier to scoop and spread.
3. Assemble the Sandwiches:
Take one cookie and place a generous scoop of ice cream on the flat side. Gently press another cookie on top to create a sandwich. Repeat with remaining cookies and ice cream.
4. Optional Decoration:
Roll the edges of each sandwich in mini chocolate chips, rainbow sprinkles, or chopped nuts for extra texture and flair.
5. Freeze Until Firm:
Place the assembled sandwiches on a baking sheet and freeze for at least 1 hour, or until the ice cream is firm again.
