Cookie Butter Cheesecake Stuffed Strawberries

In a mixing bowl, beat together cream cheese, cookie butter, powdered sweetener, and vanilla extract until smooth.
If the mixture is too thick, add 1 tablespoon of milk to reach a smooth, pipeable consistency.
Transfer the filling into a piping bag or a ziplock bag with a small hole cut in the corner.
Step 2: Prep the Strawberries

Wash the strawberries and remove the green tops by hulling them (use a small knife or spoon to carve out the center).
Pat the strawberries dry with a paper towel to help the filling stick.
Step 3: Assemble the Stuffed Strawberries

Pipe the cheesecake filling into the center of each hulled strawberry until full.
In a small bowl, mix the crushed cookies with melted butter.
Dip the top of each stuffed strawberry into the cookie crumb mixture, coating the cheesecake filling.
Step 4: Chill and Serve

Place the stuffed strawberries on a tray and refrigerate for 15-20 minutes before serving.
