Comforting Cauliflower and Broccoli Casserole: A Hearty and Healthy Dish

Preheat your oven to 375°F (190°C).
Bring a large pot of salted water to a boil. Add the cauliflower florets and broccoli florets, and cook for about 5-7 minutes, or until they are tender but still slightly firm. Drain and set aside.
In a medium pan, heat the olive oil over medium heat. Add the onion and sauté for about 3 minutes, or until softened. Add the garlic and cook for an additional 30 seconds, until fragrant. Remove from heat.
2. Make the Creamy Sauce:
In a large bowl, combine the sour cream, milk, dried thyme, salt, and black pepper. Stir in the sautéed onion and garlic mixture.
Add the cheddar cheese and Parmesan cheese into the mixture, stirring until smooth and creamy.
3. Assemble the Casserole:
In a large mixing bowl, combine the cooked cauliflower and broccoli. Pour the creamy cheese sauce over the vegetables and toss to coat them evenly.
Transfer the vegetable and sauce mixture into a greased 9×13-inch baking dish.
4. Prepare the Topping:
In a small bowl, mix the breadcrumbs and melted butter until well combined. Sprinkle the breadcrumb mixture evenly over the casserole.
5. Bake:
Bake the casserole in the preheated oven for about 20-25 minutes, or until the top is golden brown and the casserole is bubbling.
6. Serve:
Remove from the oven and let it cool for a few minutes before serving.
Garnish with fresh parsley, if desired, and serve warm.
