Coconut Cranberry Yummies

In a medium bowl, combine the shredded coconut, chopped dried cranberries, coconut flour, and a pinch of salt.
In a separate small bowl, whisk together the honey (or maple syrup) and vanilla extract until well combined.
Pour the wet mixture over the dry ingredients and stir until everything is evenly coated. If using coconut oil, melt it and add to the mixture to help bind everything together.
Step 2: Form the Yummies

Scoop out tablespoon-sized portions of the mixture and roll them into balls. If the mixture is too dry, add a little more honey or maple syrup to help bind it.
Place the balls on a parchment-lined baking sheet or tray.
Step 3: Optional Chocolate Drizzle

If you’d like to add a chocolate drizzle, melt dark chocolate chips in a microwave-safe bowl for 30-second intervals until fully melted.
Drizzle the melted chocolate over the coconut cranberry balls for an extra touch of sweetness.
Step 4: Set and Serve

Place the coconut cranberry yummies in the refrigerator for at least 30 minutes to allow them to set.
Once firm, enjoy them right away or store them in an airtight container in the fridge for up to a week.
