Heat a large skillet or saucepan over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks.
Once the beef is browned, remove excess fat if necessary. Add the chopped onion, carrots, celery, and minced garlic to the pan and sauté for 5-7 minutes until the vegetables are softened.
Add Seasonings:
Stir in the tomato paste, Worcestershire sauce, oregano, thyme, salt, and black pepper. Mix well to combine the flavors.
Pour in the beef broth and bring the mixture to a simmer. Let it cook for 10-15 minutes until the sauce thickens slightly and the vegetables are tender.
Prepare the Mashed Potatoes (if not already prepared):
While the filling is simmering, prepare your mashed potatoes. Boil peeled and chopped potatoes in salted water until fork-tender (about 15 minutes).
Drain and mash the potatoes, adding butter, milk, and seasoning to taste until creamy and smooth.
Assemble the Shepherd’s Pie:
Preheat the oven to 375°F (190°C).
Transfer the beef and vegetable filling into a baking dish. Spread it out evenly.
Spoon the mashed potatoes on top of the filling, spreading them out with a spatula to cover the entire surface. Use a fork to make a decorative pattern on top of the potatoes.
Bake the Shepherd’s Pie:
Place the assembled Shepherd’s Pie into the preheated oven and bake for 20-25 minutes, or until the top is golden and slightly crispy.
Serve and Enjoy:
Remove from the oven and let it rest for a few minutes before serving. Enjoy your warm and comforting Shepherd’s Pie!
