Classic Palabok Sauce – A Flavorful Filipino Dish

This classic Palabok sauce is rich, savory, and bursting with flavor. It’s perfect for topping your favorite noodles and making an authentic Filipino meal at home!

Ingredients
For the Sauce:
1 ½ cups ground pork
57g palabok powder (dissolved in water)
2 smoked fish/tinapa, shredded (remove head and bones)
1 liter water
1 cup crushed chicharon
4 cloves garlic, minced
1 large onion, chopped
2 spring onions, chopped (for garnish)
Chicken powder or any seasoning of choice
Fish sauce/patis, to taste
2 tbsp annatto seeds (soaked in hot water)
2 tbsp cornstarch (dissolved in water)
Oil, salt, and pepper, to taste
2 hardboiled eggs (sliced)
500g palabok noodles (cooked according to package directions)
