In a small saucepan, melt 2 tablespoons of butter over medium heat. Add the flour and whisk continuously for 1-2 minutes until a smooth paste forms.
Gradually add the milk, whisking constantly to avoid lumps. Cook for 3-4 minutes, or until the sauce thickens.
Season with nutmeg, salt, and pepper. Remove from heat and set aside.
Step 2: Assemble the Sandwiches
Spread a thin layer of béchamel sauce on two slices of bread.
Layer with 1-2 slices of ham and a generous handful of grated Gruyère.
Top with the remaining bread slices and press gently.
Step 3: Grill the Sandwiches
Preheat a skillet or griddle over medium heat. Butter the outside of each sandwich.
Cook the sandwiches for 3-4 minutes per side, or until golden brown and crispy.
Step 4: Finish in the Oven (Optional but Recommended)
Preheat your oven broiler. Place the grilled sandwiches on a baking sheet.
Spread a thin layer of béchamel sauce on top of each sandwich and sprinkle with the remaining Gruyère cheese.
Broil for 2-3 minutes, or until the cheese is bubbly and golden.
